Apple and Trout Salad

Ingredients:

  • 2 Red apples
  • 2 tbsp French dressing
  • 1 ½ cups arugula
  • 1 Smoked trout
  • 1 tsp lemon juice
  • Chives and Chive Flowers
  • Horseradish Dressing:
  • ½ cup plain yogurt
  • 1 tsp lemon juice
  • 1 tbsp Horseradish sauce
  • Salt and pepper

Preparation:

1. Leaving skin on, slice apples into a bowl, and toss in lemon juice so they don't turn brown.

2. Arrange the arugula on a large serving platter.

3. Skin trout and take out any bones, using your fingers or tweezers.

4. Flake the trout into fairly large pieces, and arrange with the apple between the arugula.

5. Make the horseradish dressing by combining all the ingredients and wisking. Drizzle on the trout.

6. Sprinkle the snipped chives and flowers over the trout and serve with melba toast.
